Notes from Sami
Growing up I knew this as Sun Tea. My mother would set out a big jar of water with lots of fresh mint from the garden and let it macerate in the hot sun. It wasn’t until I became an herbalist that I started using cool words like, “infusion.” This cold infusion can be made with hers, flowers or fruit and set out under the sun or moonlight.
