Plantain + Onion Soup

INGREDIENTS

  • 4 green or brown plantains (green will be more savory, brown will be more sweet)

  • 2 medium sized onions

  • 2 tablespoons ghee or oil

  • 4-6 cups broth depending on how thick or thin you want it

  • Salt and pepper to taste


Prep & Cook time approx. 30 minutes


INSTRUCTIONS

1) Dice onion and sauté in soup pot or Dutch oven with ghee or oil on medium heat.

2) While onion is cooking, slice plantain, then add plantain slices to pan once onions are starting to turn golden.

3) Allow onion and plantain to sauté together for 10 minutes, then add broth.

4) Let onion, plantain and broth to come to a boil then turn off heat.

5) Blend together until desired texture is reached. Season to taste.

6) Serve immediately or freeze to have later.
