Note from Sami

Practice makes perfect! Over the years, I have made plenty of mistakes while making ghee so don’t be discouraged if your first couple batches don’t turn out great or if you burn them. It happens! And remember, we have ghee for sale in our Etsy shop 😉

Ghee

What you need

  • Clean glass jar or container

  • Pure butter - ideally raw, cultured and unsalted

  • Large saucepan or frying pan

  • Flour towel or cheesecloth

  • Funnel (optional)

Prep & Cook time approx. 35-45 minutes

INSTRUCTIONS

  1. Place butter in pan on medium heat.

  2. Allow butter to cook for about 15-30 minutes depending on the amount you are cooking and the size of your burner. You will notice thick white/yellow foam forming on the top.

  3. Reduce to low heat and allow it to cook for about 10-20 more minutes. Once foam clears, you'll be left with clear, golden oil. Notice the darker cooked particles at the bottom of the pan, don't let it burn. Dark brown is okay, black is not. See photos.

  4. Once you have a clear, golden oil with most of the foam gone and you smell a nutty flavor, the ghee is ready.

  5. Allow it to cool off for 10 minutes before straining.

  6. Prepare your jar with the cheesecloth and/or funnel.

  7. Carefully pour liquid through cheesecloth and store on counter, refrigeration is not necessary.

Make sure to use a clean, dry spoon when scooping out your ghee for use to avoid contamination (mold).
